Food Safety is no longer just a good idea. Recent legislation introduced in Florida included a "Farm to Fork" food safety program. The FDA is now promoting food handlers as the first defense in a Food Safety program which seeks to recognize and identify bio-terrorism in the food chain and supply system. Through news exposes and online inspection reports, your customer is becoming more knowledgable about what you can and can't do with his food. And, he is ready to hold you accountable. 

Florida chooses to be proactive. It has required that all food managers pass a Food Manager Certification test, which signifies a basic understanding of safe food practices. Florida further requires that food employees also have food safety training. The inspectors for the Division of Hotels and Restaurants are now inspecting for practices that can lead to foodborne illness. Although floors, walls, and ceilings continue to be part of the inspection, it is the food handling that gets the most scrutiny.
